Red Velvet Beet Cake

Ingredients

  • 2 cups of flour
  • ¼ cup of cocoa
  • 1 teaspoon of baking powder
  • 1 pinch of salt
  • 3 eggs
  • 2/3 cup of canola oil
  • 1 bag of beet puree Épurée
  • 1 cup of sugar
  • 1 tablespoon of vanilla essence

Suggestions

  • Frost the cake to your liking; chocolate, vanilla, cream cheese frosting or just serve with a raspberry coulis or whipped cream.

Preparation

  1. Preheat oven to 350°F.
  2. In bowl, sift flour, cocoa, baking powder and pinch of salt.
  3. In a mixer or blender, beat egg and oil until smooth.
  4. Add the puree beet Épurée, sugar and vanilla essence and whisk for 1 to 2 minutes.
  5. Add dry ingredients in 2 or 3 batches.
  6. Place in an 8-inch pan (or 12 small cupcake tins)
  7. Cook for 20-25 minutes and check with a toothpick.
  8. Let cool and unmold.
