Ingredients
(2 servings)
- Half chicken or 2 legs or 2 breasts piri piri
- 1 bag of mashed potatoes Épurée
- 12 olives (olive flavor to your liking)
- Salad (arugula or lamb's lettuce or salad of your choice)
- 1 tablespoon oregano
- 1 teaspoon Dijon mustard
- Sherry vinegar
- 1 tomato
- ½ onion
- Olive oil
- 200 ml cream
Suggestion
- Add Espelette pepper to the purée
- Cooking chicken on the BBQ
- You can get a great piri piri chicken recipe on the internet, choose your favorite recipe or buy the sauce at the grocery store or your favorite BBQ chicken recipe
Preparation
- Preheat the BBQ or oven.
- Cook the chicken.
- Coarsely chop the olives.
- Heat the mashed potatoes to ¾ of the chicken cooking time
- Chop the tomato and onion finely for the salad, chop the oregano.
- Mix mustard, vinegar and a drizzle of oil for your dressing. Season and add oregano before serving.
- Raise the plate and enjoy!

I recommend a Session IPA; its mild and bitter notes pair well with the spicy kick of piri piri.
