French salmon tartar with beet purée

Ingredients

  • 280g of salmon from L'Atelier du Tartare
  • 1 tbsp. puree beets Épurée (to taste)
  • 2 tbsp. French Super Tartar Mix (to taste)
  • 1 tsp. finely chopped French shallot
  • 1 tbsp. diced apple
  • 1 tbsp. diced cucumber
  • 1 tsp. dijon mustard and 1 tsp. lemon juice
  • 1 tsp. maple syrup
  • Sriracha
  • Salt and pepper
  • 1 tbsp. chives
  • Crushed crispy bacon
  • Roasted pecans

Preparation

Mix
